Talus Wind Heritage Meats of Galisteo, New Mexico has begun its 2011 lamb
production. Animals are currently being processed in our Mountainair facility
and product is available both fresh and frozen. In addition, we have fresh and
frozen Rio Grande Wild and Standard Bronze Heritage turkeys.
Founded by Galisteo rancher, Tim Willms, Talus Wind Heritage Meats purchases animals directly from Willms’ Galisteo ranch as well as form small New Mexico ranchers in the northern and central parts of the state. We purchase, transport, process and distribute the product ourselves, enabling us to track the animal from ranch to refrigerator. This allows us to conform to Willms’ stringent standards of traceability and transparency.
Transparency refers to Willms’ dedication to environmental stewardship. We guarantee that our animals are raised by traditional ranching methods on properties that are environmentally sustainable. They are never given hormones and are only given antibiotics on an individual basis to treat illness.
Humanely raised, transported and processed, our animals never see a feedlot. The result? Lamb that is tender and flavorful, animals that are well cared for, and local agriculture that is supported by New Mexicans.
